Oatmeal differences, quick cook verses longer cooking times?

These take longer to cook, but have better texture and flavor.Rolled oats are "instant" oatmeal -- they have been partially cooked and flattened, and quickly turn into the bland, paste-like stuff that people typically associate with oatmeal.
